Cadbury Egg Cookies

INGREDIENTS

• 1 cup butter flavored shortening
• 1/2 cup butter
• 1 1/2 cups peanut butter
• 2 cups sugar, divided
• 1 1/2 cups packed brown sugar
• 4 eggs
• 3-3/4 cups flour
• 2 teaspoons baking soda
• 1 1/2 teaspoons powder
• Cadbury Eggs

INSTRUCTIONS

  1. Preheat oven to 350°
  2. In a big bowl of a mixer, combine the shortening, butter, peanut butter, 1 1/2 cup sugar and brown sugar until light and fluffy.
  3. Add eggs, one at a time, stirring until well blended after each.
  4. Combine the dry ingredients; gradually add to the creamed mixture and mix well. Refrigerate for at least 1 hour.
  5. Form 2 tablespoons around each egg until fully covered. Roll balls into remaining sugar.
  6. Bake on an ungreased baking sheet for 8-10 minutes or until set.
