3/4 stick of butter, melted (1/2 cup)
1/4 cup butter shortening
1 cup white sugar
1 cup brown sugar
1 tablespoon raw blue agave sweetener
3 cups flour
2 teaspoons baking soda
1 cup sour cream
6 very ripe bananas, mashed
- Preheat oven to 350F.
- Grease and flour a bunt pan.
- In a large bowl, blend together the melted butter, shortening clean and sugars. Add the eggs, blue agave and blend to a smooth consistency.
- Mix together the flour and baking soda. Add to the batter and stir to blend. Fold in the bananas and sour cream and mix until combined.
- Pour batter into prepared pan and bake 60 minutes or until a toothpick inserted into the center comes out clean. Cool until warm before serving
